This cupcake came about when I was making pies for Thanksgiving. I started craving a pumpkin roll with all those spices and cream cheese frosting. It wasn't until the New Year had come and gone that I finally perfected this one, but the wait was worth it. The cake is a pumpkin spice cake with cream cheese frosting down the middle. The whip cream frosting only enhances the wonderful flavor. Don't wait til the holidays to try this amazing cupcake.
